potato smash soup

My good friend Kelly shared this recipe with me long ago, though it used to be called “Mashed Potato Soup”. It was renamed by someone at one of the potlucks we took it to, and the name stuck. Though we haven’t made this vegetarian dish in a while, it’s one of our favorites, and [...]

grilled zucchini planks

These couldn’t be any easier – and they’re pretty tasty! The trick here is to use “younger” zucchini so the skin is still tender. Once the skin gets too dark, that is a sign that it will be tough and the seeds will be too mature to enjoy in this form.

chocolate zucchini bread

This recipe is also one that came from Elizabeth, which she copied from one of her recipe books. Sadly I don’t have the title, but the author of the recipe is Michelle Larson of Madison, WI. I’ve made this several times and it is really darn good… and perfect for the end of the summer [...]

potato and zucchini gratin

Last week I needed to use up some potatoes Mike had purchased from the farmers’ market as well as a pretty large zucchini I’d harvested from our back yard. I scoured the ‘net looking for potato-zucchini gratin recipes and didn’t find a really good one, so I tried to meld a few them together into [...]

garden goodness pancit

Sorry it’s been a while since any recipes have gone up! It’s been a crazy (but good) month of July, full of family visits and vacation. Hopefully, the schedule will be a bit calmer here in August.
So, I think that the next few recipes will focus on the garden harvest. Our little garden [...]

party tested sauce, veggie version

Here is the veggie sauce we made for our get together earlier this week. Got some great reviews!

1 red pepper, chopped
1 green pepper, chopped
4-5 cloves garlic, minced
1 28 oz can crushed tomatoes
1 15 oz can fire roasted diced tomatoes

2 [...]

scalloped potatoes

This recipe is from Mike’s mom – written on a 3×5 index card for him when he went away to grad school. Definitely a keeper! I’ve only made one change, adding garlic powder to the seasoning mix.
One note – you have to let this stand for one hour before serving, so plan ahead.

mediterranean quiche by emeril

Here is another recipe from Easter brunch, also vegetarian for my friend Deb. You can also get this recipe from Food Network by clicking here.
Two important safety tips with this recipe. First, be sure to allot enough time for the quiche to sit and firm up – the recommended 30 minutes didn’t seem like [...]

eggplant parmesan

My good friend Deb joined us Saturday in preparation for Easter festivities, and since she’s a vegetarian I thought I’d make her some eggplant parmigana for dinner. I looked at two recipes (from epicurious.com and food network), merged them together, and added a few touches of my own. It turned into a dish that worked [...]

menu: squash ravoli, broiled salmon, and carrot cake

Fellow Foodie Masako was visiting here yesterday with David and Dexter, so of course we had to whip up some good eats. In an effort to use some CSA veggies, we came up with the following menu – two were adapted recipes from other websites, and then one we made up on the fly. Thumbs [...]
