I have no excuse other than that I am chasing after a 15 month old but he’s in bed now (7p) so I am going to make an entry because this recipe is definitely worth sharing. I can’t take credit for the recipe, because it’s from our clinic’s receptionist, Mary B., who makes these for us every few months… we are so spoiled…
4 squares (4 oz) of unsweetened chocolate
1 cup unsalted butter
2 cups sugar
2 teaspoons vanilla
4 eggs
1 cup flour
12 oz semi-sweet chocolate chips
1) Preheat oven to 350 degrees.
2) Melt chocolate squares and butter over low heat, add sugar until mixed in. Remove from heat and let cool.
3) Add eggs one at a time
4) Add flour and vanilla
5) Fold in choclate chips
6) Pour into greased 9×13 pan
7) Bake for 30-35min at 350 degrees.
For the icing:
1 stick butter
2/3 cups cocoa ( i used Dutch cocoa powder from Penzey’s )
3 cups powdered sugar (no, this is not a typo)
1/3 cup milk
1 teaspoon vanilla
1) Melt butter and stir in cocoa
2) Add powdered sugar and milk.
3) Beat at medium speed and add more milk if it needs thinning (i added probably 2-3 tablespoons more)
4) Stir in vanilla
5) Ice brownies and try not to eat the whole pan in one day. : )
